I think that I usually wind up with more drumettes than flats when I order wings, and I prefer the flats. I think that this is because some people ask for just flats because they prefer them. When the kitchen accommodates them the rest of us get less flats. It is for this reason that I think it is wrong to ask for just flats. It's getting to the point where I'm starting to think wings should be delivered uncut to the diner.
I also have a problem with the way blue cheese is served. It should be served in a shallow bowl with a large enough opening that you can properly dredge the wing in it. This is especially true for the flats which are more difficult.
